Edible coating obtained with whey protein concentrates to protect fishery and aquaculture products during their frozen storage, obtaining procedure and use. The coating is a water soluble edible liquid composed of an aqueous mixture of whey protein concentrate, optionally with sorbitol and/or glycerol. The process for obtaining the coating comprises a mixing stage of the components, followed by a heating stage and a cooling stage. The use or application of the coating consists of coating by immersion of the fishery and aquaculture products, still in a fresh state or already frozen, in the liquid coating, subsequently keeping them frozen. The edible coating acts as a protection, particularly against lipid oxidation, which extends the preservation of fishery and aquaculture products stored frozen.
