Procedure and equipment for continuous longitudinal separation of cooked tuna. which comprises the holdingof each tuna through the head and tail in a horizontal position, sticking a dorsal and a ventral blade into its body and causing the relative displacement between the body of the tuna and the blades, until the tuna is cut into two halves. The blades protrude from tilting heads articulated to robotic arms, under which a conveyor belt runs to collect the halves of the tuna, once cut.
