One of the main challenges in 3D food printing is related to the stabilization of the food mixture once it has been deposited outside the extruder head. This issue complicates, for example, the ability to ensure a stable and accurate printed shape, as there is a constant risk of collapse. This patent application presents a method and corresponding devices for the thermal post-processing of food deposited using 3D printing techniques with an extruder head and localized microwave radiation. This method enables the gradual, precise, and adjustable consolidation of food layer by layer, or multiple layers simultaneously, resulting in the construction of a desired shape with sufficient stability to prevent collapse.
