Procedimiento biotecnológico de obtención de ácido láctico natural que, a partir de la recuperación del suero de quesería o lactosuero, comprende las etapas de: fermentación del suero de quesería sin tener que hacer un ajuste de pH, en la que se obtiene ácido láctico, separación directa del ácido láctico obtenido, procedente del caldo de fermentación, mediante una primera nanofiltración (NF), para obtener ácido láctico permeado (nanofiltrado) y, a continuación, concentración del ácido láctico permeado mediante una segunda nanofiltración (NF), a fin de lograr un ácido láctico más puro, con mayor valor añadido.
